Verde especiado with bar syrups
Concept: fruity Scotch whisky, green apple, honey, cinnamon and subtle wasabi heat in a short, lightly sweet and citrusy sour. It retains the roots of “Verde especiado,” the rocks glass with a large ice cube and the slightly cloudy appearance without noticeable paste or fibers.
Twist: commercial honey and cinnamon syrups and store-bought apple juice allow one serving without making batches of ingredients. Wasabi is dispersed and filtered directly when preparing the cocktail. The 50 ml whisky dose and 125 ml nominal mixture are retained; balance and intensity depend on the chosen products and need tasting. This is neither a tested version nor an identified bar formula.
Special equipment: scale with 0.01 g resolution, liquid measure and small paper coffee filter
Ingredients
Direct whisky and wasabi filtration
- 60 ml cold Scotch whisky at 40% ABV, fruity and lightly peated or unpeated.
- 0.3 g ready-to-eat wasabi paste; record brand and composition.
- Whisky of the same type and strength, only if needed to make up the 50 ml dose after filtering.
Mixing and service
- 12 ml cold commercial honey syrup, alcohol-free and with honey among its ingredients.
- 3 ml cold commercial alcohol-free cinnamon syrup.
- 15 ml freshly squeezed and strained lemon juice.
- 30 ml cold store-bought green apple juice, 100% juice with no added sugar, preferably slightly cloudy without coarse pulp.
- 50 ml freshly filtered wasabi whisky.
- 15 ml cold drinking water, for predilution.
- 1 large drinking-water ice cube, approximately 80–100 g, for serving.
Method
Direct whisky and wasabi filtration
- Disperse and filter. Mix the 60 ml cold whisky with the 0.3 g wasabi paste until dispersed. Immediately filter through a small food-safe paper coffee filter, without a preliminary infusion rest or squeezing. Let gravity finish the filtration and check for paste particles; if any appear, repeat with fresh paper. Filtration may occupy much of the indicative 5–15 minutes. Record total duration and product, because extraction continues while filtering.
- Measure the dose. Measure 50 ml filtered liquid; if less is recovered, make up only to those 50 ml with the same type of 40% ABV whisky and record the top-up. The initial 60 ml charge is not served in full and does not guarantee a particular recovery. Keep surplus out of the cocktail; do not heat or prepare a bottle of extract for later days.
Mixing and service
- Choose the syrups. Use bar syrups containing sugar, not sugar-free products or thick sauces. As a formulation reference, look for labels near 65–70 g sugars per 100 ml: with 12 ml honey and 3 ml cinnamon syrup, they contribute approximately 9.8–10.5 g sugar per cocktail. This concentration guides sweetness and does not guarantee the same aroma between brands. If the label gives grams per 100 g, do not equate that to 100 ml; density or manufacturer information is required. Record the label in the first trial and do not claim exact sensory equivalence with the Signature version.
- Combine. Combine the 12 ml honey syrup, 3 ml cinnamon syrup and 15 ml strained lemon juice. Add the 30 ml apple juice, 50 ml filtered whisky and 15 ml cold water. Stir until no syrup streaks remain and check for even cloudiness without noticeable particles. Do not paper-filter the complete mixture: some of the apple haze would be lost.
- Check temperature and volume. The nominal sum is 12 + 3 + 15 + 30 + 50 + 15 = 125 ml. Do not top up to volume again or shake or stir over ice before serving: predilution water is already included. If the mixture is no longer at 5 °C or below, chill the covered container in an ice-water bath without adding that ice to the liquid. Use only a fine mesh strainer if the juices have any fibers; no visible wasabi should remain.
The serve
Use a transparent 250–300 ml rocks glass, previously chilled and drained, with one large 80–100 g drinking-water ice cube added at the last moment. Pour the approximately 125 ml cold mixture around the cube and present immediately without stirring again with ice. Leave the surface free of garnish, cinnamon stick or apple slice to preserve the remembered service and absence of solids. Appearance will range from straw yellow to pale amber depending on the whisky, syrups and juice, with an even haze; the name does not imply an intense green color. Aim for fruit and whisky at the opening, integrated honey and a cinnamon finish with discreet wasabi, and record how it changes after a few minutes of melting ice.
Key points
- Use 40% ABV whisky and measure 50 ml after filtering, not the 60 ml charge.
- Choose syrups with known labels: equal volumes do not imply equal sweetness or cinnamon intensity between brands.
- Retain the 15 ml water and avoid a second dilution in a shaker.
- Filter wasabi separately from the juice to remove paste and preserve the apple haze.
- Treat the proportions as a starting point for tasting, not physically validated balance.
Notes
- Estimated strength. With 50 ml whisky at 40%, there is approximately 20 ml absolute alcohol: 20 / 125 × 100 = 16% ABV before melting ice. Syrups must be alcohol-free. With an additional 10 ml water from the cube, the result is approximately 14.8% ABV. Negligible changes to whisky strength during brief contact and filtration are assumed; volumes are not perfectly additive. This is not an instrumental measurement.
- Relationship to its sibling. The Signature version retains its honey and infused cinnamon formula and its initial minute of contact with wasabi. This Essential version uses two purchased syrups and immediate filtration for a single preparation. The 15 ml syrups aim for sweetness of a similar order without promising identical aromatic concentration or heat extraction. Lemon remains a reconstruction hypothesis for the testimony's citrus descriptor.
- Storage. Prepare and consume during the same session. Keep preparations covered at 5 °C or below while finishing service and discard leftover filtrate, measured juices and cocktail at the end. Original juice, wasabi and syrup containers follow their storage instructions after opening. Do not attribute neat whisky's stability or a validated shelf life to the mixture.
- Scaling. For N cocktails, multiply final doses and separately allow for actual filtration losses, cold glasses and serving cubes. Do not multiply contact time or assume a larger filter preserves the same extraction. Record the first execution before fixing batch production.
